Indonesian Chicken and Rice Casserole
I made it up, so I hope it turns out.
It's uncooked rice with chicken breasts covered in a mixture of chicken broth, homemade peanut sauce, kecap manis (sweet soy sauce), coconut milk, and miscellaneous spices. It is now baking in the oven. If it works, I will be very happy; if not, I will find a way to salvage it. |

My cooking philosophy is the same as my "learning a new city" philosophy. Take risks, take chances, get lost/lose directions. That's the only way you'll figure it out and gain confidence. ;)

Agreed! I usually browse recipes or cookbooks for inspiration only but don't usually follow the recipes to a T. I love experimenting!

DH thinks that I'm nuts because I have tons of cookbooks and recipe clippings...but I rarely use a recipe.

It turned out! Now I have to wait until Wednesday to eat it for dinner. (I like to make a few dinners over the weekend for the upcoming week, since it gets so busy around here.)

If I had the freezer/fridge space I would totally premake meals especially since school is in session and life is crazy. 4 hours between end of school and bedtime trying to cram quality time and homework help while making dinner is "fun" |

They did! Of course since dh grew up in Indonesia he likes anything with peanut sauce and kecap manis and some fried onions on top.
