Help! I have chicken thighs defrosting...what should I do with them?
Last time I made them for dh and ds I put them in a crockpot with bbq sauce and made sandwiches with it.
But this time, I would like to roast or fry them. I plan on serving broccoli and biscuits as well. I do have some red potatoes, onions and carrots, too. Hmm...what can I make that would be super yummy? |

:think I'm not huge on chicken thighs. I usually avoid them... but sometimes we BBQ them.

I'd cut up the veggies and bake it all together with some seasoning. :yum

Yeah, I'd drizzle the whole thing with olive oil, and add salt, pepper, maybe some sage and garlic. :)

I LOVE chicken thighs, and have tons of great recipes that I use them in ... but can't remember off the top of my head. YOu can use chx thighs in the same way you would use pork chops, but they don't dry out as much! :yes

I have an amazing recipe...it is NOT healthy, but it is the only sugar that is EVER allowed in the house, so I don't feel bad about this every once in a while:
2-3 lb. chicken thighs (boneless preferred) brown sugar butter oil 16 oz. sliced mushrooms 3-4 onions, halved and sliced Place chicken in 9x13 glass dish - salt and pepper IN large skillet, melt about 2/3 -3/4 stick butter (told you it wasn't the healthiest) with about 1/4 cup oil. Saute' onions and mushrooms until very soft. Stir in about 1 cu. brown sugar until dissolved Pour all over chicken Cover tightly with foil and cook ~3 hours at 325F. Uncover and cook ~10-15 minutes...until sauce starts to caramelize We typically serve with roasted or mashed potatoes and either roasted asparagus or a salad (mesclun greens, cranberries, feta, walnuts, and balsamic vinaigrette). |
