Vegan/Vegetarian casserole or bring to dish?
When I make people meals to bring over (like when people have babies or in need - that kind of thing). I have many go to dishes. But they all have cheese.
HOWEVER, I have a family that has a lot of dietary restrictions. Diary is out. So it doesn't really have to be totally vegan - but it would need to be meat & diary free! And something I can make & bring over as a drop off meal. So you wacky no cheese eating people - what kind of help out dish do you make for people? |

Lentil Enchiladas. This recipe for the filling rolled into flour tortillas & topped with enchilada sauce. (I often add nutritional yeast to the filling.)
When I had my kids, I would've looooved a nice pot of vegetable soup + hot bread. :tu Do you know if they like any ethnic foods? Indian & Asian have a lot of vegan or dairy free recipes. |

The veggie soup & bread is a pretty good idea. Plus that would reheat really well. I think I am going to try the lentil enchiladas for our family first. Just because I hate to make something new without trying it first. But i have time to make a round first here. These are great ideas! Thanks! |
