Re: February's Fabulous Food!
Last night we had Baked Cajun-spiced Chicken and Kale chips. I got complaints about the kale while it was in the oven so I made macaroni muffins from some leftover elbows and steamed some cauliflower.
Tonight I got sides going, but couldn't decide on a protein, so dh went out for takeout. :bag |
Re: February's Fabulous Food!
Macaroni muffins? I have two kids who would love those.
Kids are at my IL's tonight so we are going out! I'm planning on chicken and waffles - leftover craving from my 4 year old's pregnancy that I never fulfilled. :shifty :giggle :yes |

Re: February's Fabulous Food!
I made Parsley Scallion Hummus Pasta when my son's vegan girlfriend was here for dinner last night. It was different but good. I used vegetable broth instead of water, and you need more than you think to thin the hummus as it warms. I have to admit that a sprinkling of [optional] cheese helped the dish quite a bit. ;)

Re: February's Fabulous Food!
I cobbled together tortilla soup using the chicken no one liked two weeks ago. It turned out reasonable well.

Re: February's Fabulous Food!
We're having fish tacos at my parents house tonight to celebrate DH's bday and I'm making a diet approved cheesecake!
|
Re: February's Fabulous Food!
I pulled some Mexican chicken soup out of the freezer for tonight.

Re: February's Fabulous Food!
I made sneaky pizza tonight. Sneaky because I put all the veggies in the sauce and blitzed it, then presented it as plain 'cheese' pizza. I'm sick of making food and then having the toddler turn his nose up at it.

Re: February's Fabulous Food!
I like that idea!
Chicken enchiladas tonight. Onion, yellow bell pepper, green chilies, spinach, cumin, cream cheese, a little coconut milk, chicken in some...wrapped in corn tortillas and topped with shredded cheese, baked at 325 for 20 minutes. :yum |
Re: February's Fabulous Food!
We had a beef stroganoff rice casserole with leftovers in the fridge from last night. With steamed veggies. Chocolate peanut butter muffins for dessert

Re: February's Fabulous Food!
We had roast chicken brushed with a mixture of butter, salt, pepper, cinnamon and garlic. I usually mince or crush the garlic but I was too tired so I used granulated. We had spinach sauteed in bacon grease. I may have used more then necessary since it was to the top of my jar and I didn't want to start a second one. LOL I seasoned that with salt, pepper, and granulated garlic.

Re: February's Fabulous Food!
Last night was All Meat Veggie Chili. It's a Paleo recipe. Lots of meat but also carrots, celery, onion, and zucchini. No beans.
I need to remind DH to take home food for him and the twins tonight. I'm closing and came in earlier than usual so unless he wants to cook at home after making tray after tray of baklava and other prep, I'd better make sure he leaves with dinner and lunches for school. Unless I end up closing tomorrow, I'll be off around 3. So I'm planning a zucchini and egg bake that also has ground sausage. If I do close, it's not difficult or too time-consuming. I can make it for lunch for me and then they have leftovers. I would just need to remember to do it. |
Re: February's Fabulous Food!
Lunch today: Vegetable couscous in the IP I added a can of black beans for protein. Yum Even the kids liked it! :woohoo

Re: February's Fabulous Food!
I made this funny recipe for the kids the other night that we had at a friend's house.
You make your favorite cornbread batter. Pour into muffin tins about halfway, add some cut up hot dogs (I buy the grass-fed beef ones at Wal-Mart) and add a little more batter. Corn dog muffins. The kids love them. Go figure. Today was the last day of ski school I was was wiped out. mac & cheese for dinner. Tomorrow i have to do menu planning. :blah |
Re: February's Fabulous Food!
Corn dog muffins sound fun.
Last night I made pasta sauce using half sauce from a jar, half homemade creamy tomato soup and added lots of spinach. It was good! |
Re: February's Fabulous Food!
Last night I made our favorite Creamy Chicken and Wild Rice Soup; both of my girls have the flu and the rest of us are fighting getting it.

Re: February's Fabulous Food!
Frozen pizzas will be baked at our house tonight. The day was spent assisting dh as he repaired our dishwasher (that man will try any job) (it's running now :)) and for some reason it feels like a great night to not cook.

Re: February's Fabulous Food!
I had a rehearsal this afternoon and was stressing out trying to figure out what to make for dinner. So . . .. . . . . . . . . . .. . . I foisted off the duty on dh. :giggle. He had all afternoon and full fridge and deep freezer. My sister said that if he was in charge, it would be something from a drive through. She wasn't far off - he went to the local sub shop.

Re: February's Fabulous Food!
We had baked ziti the last two nights and are making oatmeal pancakes tonight. Though I had a huge craving for a turkey sandwich while I was at the store just now, so I got stuff for that too. :shifty
