I didn't do sweet and sour, but ViolaMum inspired me to open a cookbook. :lol

I started with Pioneer Woman's Chicken Kale Pasta. (found her new cookbook at the used book store for $4, score!)

I cooked the chicken before I cut it, used spinach instead of kale, and since I didn't have tomatoes I added maybe 1/2 c. of mango salsa. It was delicious!

(I don't know how I cooked for so many years without a good digital meat thermometer. No more overcooked chicken for me!)

We had tomato soup.

After years of missing laMadalin's tomato basil soup after going dairy free I finally have a recipe that is as good as what I imagine. And it is super easy. Roast tomatoes, garlic and onion on a sheet pan, blend with Coco nut milk , sun-dried tomatoes and tomato paist. Heat and add salt pepper and basil to taist.

We had Moroccan chicken with hummus, rice and Lebanese salata last night. The salata is made out of tomatoes, peppers, and cucumbers. DH has not been eating tomatoes, so I separated those out. He was so thrilled :giggle

Tonight, I'm attempting to modify my Pork Carnitas recipe to be made with chicken thighs because that's what I had. Time will tell!

Brussel sprouts are one of my happiest veggies on earth. For some strange reason I'm the only one who loves them. Everyone else claims they stink up the house. :-/ :shifty Do not fret -- it does not avert me in the slightest. :shifty :lol

Anyway, tonight we had beef and veggie strogonoff over zucchini noodles for the adults and mashed potatoes for the kids. :heart With, ironically enough, roasted brussel sprouts for me and roasted mixed veggies for the other crazies in my family. ;)

I didn't like them growing up. Which always baffled me, because there are very few foods I don't like! My mom made them occasionally and I always tried them, determined that I would like them. Nope :p

My boyfriend made them a few months ago and I loved them! :jawdrop Now I have to eat them at least once a week :doh

It seems like everyone's mom used to steam mushy Brussels sprouts, and it's no wonder we didn't like them. Roasted or sautéed with shallots is a whole different thing.

Tonight I made soup with potatoes, leftover bits of steak, rosemary, chicken stock, and coconut milk. I used the hand blender to puree a bit of it. And I made gluten free biscuits with lots of shredded cheese. The crispy cheese made them yummy in spite of the gumminess. ;)

I made sausage carbonara over tortellini with steamed broccoli on the side. Littlest, who usually eats only the starch or the meat ate only a bowl of broccoli. Go figure!

I have Japanese Eggplant that I'm going to do on the grill pan. Not sure what I'll put on top of it, though. I'm thinking maybe cheeseburger flavors (ground beef and cheddar) or possibly Caprese salad (tomato, mozzarella, and basil).

I ended up changing course. :giggle

I still grilled the Japanese eggplant but topped it with olive tapenade and ricotta cheese (or plain, or with cheddar cheese for the picky ones). I garnished with grilled lemons for me and the kids stole them and then fought over them! <Grumblegrumble> A couple of years ago I discovered a Moroccan stew made from chick peas and carrots - it's seasoned with ginger, turmeric, and cinnamon and it's just delicious! I didn't have chick peas, though so I subbed lentils and it was almost as good. That over rice for those who wanted rice. Only complainer was Littlest, but she's four.

Tonight is what we call Peanut butter noodles.

Peanut and Sesame Noodles

1 cup peanut butter
1.5 cups boiling water
4 to 5 tbs. vinegar (rice or cider)
2 medium cloves garlic, minced (I used more)
2 tbs. honey or sugar (I used honey)
1 tbs. soy sauce
.5 tsp crushed red pepper (to taste)
.5 tbs chinese sesame oil (any will work)
optional .5 lb firm tofu, diced (if you use that, it is good to boil it
after you mince it and before you use it... it makes it firmer.

1 lb vermicelli noodles (I use whatever I have around)
1 med cucumber, peeled, seeded, and cut into thin strips
4 scallions, finely minced
.75 cup minced cashews and/or peanuts, lightly toasted (I use regular
unsalted peanuts, not minced or anything)
Optional: minced fresh cilantro ( I have never used that)

1. Place the peanut butter in a medium-sized bowl. Add boiling water,
and
mix patiently with a spoon until blended.

2. Stir in vinegar, salt, garlic (see my note below), honey or sugar,
sosauce, crushed red pepper, sesame oil, and tofu. Taste to adjust
seasonings; set aside.

3 Cook the vermicelli in plenty of boiling water until just tender.
Drain,
and immediately transfer to a serving bowl. Pour the sauce over the
top and
toss with two forks. As you toss, add teh cucumber strips and minced
scallions.

4. Serve immediately, topped with nuts and a sprinkling of cilantro.

My note on garlic. this recipe calls for you to be using RAW garlic.
DO
NOT do that. We tried it the first time, and it is WAY too much (and
we
are garlic lovers, too). I just sautee it before adding it to the
sauce and
it is alot better.


NOTES:
We use whatever noodles I have on hand.
I use cayene pepper in place of the pepper flakes.
We blend the sauce using only 1 cup water. Much easier than mixing pb & water. :yes

My mom made dinner tonight: roast beef, potatoes, green beans, corn, french bread, gf gravy, tossed salad, chocolate cupcakes and ice cream for dessert. :yum

Oh come to think of it, I didn't make lunch either: Sil made gf chicken strips, tater tots, and lettuce salad

I love days when I don't have to cook, especially on vacation!!! :dance
