Absolutely! The only meatballs I've made that haven't turned out well were the batch I made a couple of weeks ago. I jumped on the trend of using sausage - used a lean turkey sausage and cooked everything in the crockpot. The tomato sauce was fantastic, but the meatballs turned out tough. The kids liked them, so :shrug3 but I'm definitely going to tweak the recipe next time. (I think all the fat in the sausage ended up in the sauce.)

It's funny, how pretty much every culture has a traditional meatball of some sort. Those Thai meatballs look great :yum I've gotta try them. My mom's family (Scandinavian) makes Swedish meatballs, my dad's family makes Italian polpette that are half bread, then there's Egyptian Kofta, Mediterranean lamb meatballs, the Japanese have a version that I forget the name of. I've even seen some made with fish. I'll bet if we all put our heads together we could come up with a month's worth - different flavors for each day!

Last night we had spicy shrimp tacos with garlic cilantro lime slaw with a mexican salad. I also made a fresh strawberry cake for dessert (but halved the recipe and just made one layer).

I only had half my family home for dinner tonight so we did simple. Meatball subs with fruit salad and raw veggies and dip for dinner. :heart

Visited my mil (it's 90 here today and she has a pool :rockon) and she grilled us up some chicken, hotdogs and potatoes. :heart So I don't even have to cook! :rockon

I received some bone-in chicken thighs from a local store. I remembered them being kind of tough, so I googled a marinade. This was amazing!

Citrus-Marinated Chicken Thighs (I skipped the zest and used pre-made OJ)

DH was asking for NE cole slaw, so I made this: http://www.pressherald.com/2011/07/0...yo_2011-07-06/

I made a marinated salad and some sauteed spinach to go with it.

We should be in the 90's in another hour or so, same thing for tomorrow. There is no way I'm turning on my oven! We're having muffalettas tonight (planning enough so we can have leftovers tomorrow for lunch) and I'm making cheesy chicken for nachos in the crockpot tomorrow night. Tuesday is looking like it will be the same weather-wise, so I've go to figure out another meal that doesn't use the oven.

One of the meals the boys requested for this week, even though they had it last time they were here, and maybe the time before that ;) Homemade GF macaroni and cheese with chicken and diced tomatoes. Veggies on the side.

Balsamic chicken & onion wraps.

Slice chicken and onions. Saute. Add some balsamic & sugar. Cook down a bit.

Busy night tonight with the combination of 8th grade graduation ceremonies and other existing commitments. So we went simple.

Subs (meatball or turkey) and steamed carrots.

It's still in the 90's here plus DH and DD2 aren't going to be home for dinner. I made a pot roast in the crock pot on Saturday that didn't get eaten, so that's getting reheated and turned into a Bolognese sauce for dinner. (Oldest, my pickiest one by far, said she'd only eat pot roast with pasta.) I'll probably make a salad and saute some green beans to go with it.

Margaret starts her summer ballet program today. Its from 5pm-7:30 (tuesday-Thursday for two weeks) so I need meals that I can both feed her early like around four but will still keep long enough so others can eat at a more normal dinner time and wont require me coming back around 8pm to make it..

Tonight I made a tri color carrot onion celery soup with added garlic spinach and chicken and picked up a loaf of multigrain bread to have with it (Margaret having some GF toast)

Is oat flour the only kind of flour one can use?

Not sure of her recipe but we use coconut flour in our gf/df pancakes.

Coconut flour wouldn't work but I use whatever GF flour blend Walmart has. It was King Arthur, now it's Pillsbury. As long as it's a cup for cup measurement, I have good results :-)
