May Dinners
 
What are you eating for your main meals in May? Please share recipes, links, and pics, too.

Well, I was all set to share my meal plan for this week, when I looked and realized it's not done. :sigh

Tonight is anyone's guess
Tuesday - sandwiches
Wednesday is out (We're going to see The Secret Garden in Seattle.)
Thursday - baseball night which means probably chicken something in the IP
Friday - Sweet Pea has a formal dance. Dh will be on dinner duty. Meatball subs maybe.

Tonight we had spaghetti and meatballs. Over pasta for the kids and zucchini noodles for the adults.

Steamed broccoli on the side.

Breakfast for supper - bacon, spiralized potatoes turned into hashbrowns, gf pancakes, eggs for the egg eaters, strawberries, oranges

Chicken marinated in Italian dressing, sautéed mushrooms and onions, roasted cauliflower and carrots. Apparently we're having cheesecake for dessert later because my dd and her friend accompanied my dh to the grocery store and batted their eyes at him . ;)

Home made pseudo sushi with wild rice, shiitake, avocado, cream cheese and tuna. Youngest did not want to eat it, I told them to try at least two slices. That took a half hour but then they asked for other food. I caved after knowing it was an honest effort to try a new food and made some cheese stuffed sourdough dumplings with pasta sauce.

Last night we had ribs, baked sweet potatoes with coconut oil and cinnamon, a spinach salad, and rolls.

Tonight we'll probably eat on the baseball field because DS's game is from 5-7 so I won't have time to cook. Thankfully, they actually have good food at the snack bar!

Last night was flounder (cooked on the indoor grill) and brussels sprouts. Don't know about tonight yet...

Last night we had parmesan millet crusted tilapia, gf pasta with tomatoes and herbs, lettuce salad with red wine vinegar dijon vinaigrette.

Tonight is chicken and veggie stir fry over rice with fresh pineapple.

Tomorrow is Coconut Curry Chicken & rice. I need to find a way to include a veggie, but it will be after Munchkin's baseball game.

Well, my husband and I are eating out tonight, so I'm leaving the children a quick potato salad and my oldest two have assured me they'll take care of the rest (dessert and such)
I don't really like leaving them at dinner time (It's different when we're arranged for a friend to come over and look after them or something) but DH surprised me with a previously unscheduled 'date' for tonight, and there's no time to get a babysitter.
I guess I'm too attached sometimes. They are adults, after all.
But, yes, that's tonight's plan :)
