You could try some of the baked goods. Or stuffed and toasted for dinner.

Re: What are you eating in September?
I made this Simplest Zucchini Parmesan Pasta once this summer and we loved it!
---------- Post added at 06:42 AM ---------- Previous post was at 06:41 AM ---------- It's HOT here this week, so I'm trying not to use the oven. Tonight we're having GRILLED PESTO CHICKEN COUSCOUS BOWLS. |
Re: What are you eating in September?
passthemanna - we like stuffed zucchini. Cut in half lengthwise. Scrape out seeds. Mix ground sausage, egg, breadcrumbs & parmesan cheese. Stuff the zucchini. Bake at 350 for 20-30 minutes, until squash is soft & sausage is cooked. My kids love it!

Re: What are you eating in September?
Tonight is the lasagna I didn't make last week. 1 beef and 1 spinach and mushrooms. In addition to the cottage cheese I had to buy more spinach and mushrooms since we ate all previous. I still have the rest of the ing. DD has a game so I need to start making as soon as I get home for ds, dh and I. Not sure if she will want to eat it right before a game but she can have it later.

Tacos, rice with veggies, ranch salad

Re: What are you eating in September?
I seem to have put a lot of chicken on the menu this week. Last night was Mexican style chicken traybake, tonight is baked gnocchi with chicken and chorizo, and tomorrow (which I've just realised is the last day of the month!) will be chicken chasseur.

Re: What are you eating in September?
Chicken marinara and spaghetti squash.

I feed the freezer. Might as well save myself time when I can I've been pureeing zucchini and putting it in the freezer. (Some of it I freeze in ice cube trays, some in larger containers.) Over the winter, I can use the ice cube size puree for thickening sauces, and I make soup with the larger portions. (DH and I like curried zucchini soup. Sometimes I just add it to veggie soup broth.) If you eat zucchini noodles, they freeze decently well. (I don't have a spiralizer. The hand-held julienne peeler that looks like a harp-style veggie peeler works really well for me and is super cheap.) We have a huge excess of butternut squash, too, much of which is going into the freezer later this week. ---------- Post added at 08:40 PM ---------- Previous post was at 08:39 PM ---------- We had egg roll in a bowl last night. Tonight I made lemon-caper chicken and roasted brussels sprouts and roasted broccoli. |

Chicken Parmesan because friend had a baby and that’s my go-to meal for new mamas. And of course, I just make a pan for us too.
