Nearly a full serving of fruit in two muffins!
I have been looking for a really banana-y muffin recipe for a long time--and I found it! This makes super-moist muffins that are supposed to stay fresh for a long time and also freeze well, but I can't testify to that because they won't last that long.
Put rack in bottom third of oven and preheat to 350 degrees F. Grease and flour a 12-cup muffin pan. In a large bowl, mash until nearly free of lumps: 5 (yes, 5!) overripe bananas Set aside. Mix in a medium bowl: 1 1/4 cups whole wheat flour, preferably King Arthur White Whole Wheat 1/2 tsp. salt 1 tsp. baking soda Set aside. Beat in a small bowl: 2 eggs Stir the beaten eggs into the bananas along with: 1/2 cup olive oil 1 scant cup sugar Add the dry ingredients to the wet ingredients and stir just until thoroughly blended. Fill the muffin cups and bake for at least 15 minutes or until the muffins pass the toothpick test. These muffins may take longer to bake and probably won't be done until thoroughly browned on top. Let stand in the pan for a few minutes, then turn out and serve warm. Wow, these are good! And they satisfy my sweet tooth without crowding healthy foods out of my meal plan. |

Oh that sounds so super yummy, but my pessimistic self loathing voice says "think of the carbs...".

I bet you could use sugar substitute if you were concerned about the amount of sugar. I think that the carbs are overshadowed by the fact that this recipe uses cheap fruit that would not be edible otherwise and a reasonably sized serving of muffins actually delivers an appreciable amount of fruit. The mashed banana alone nearly equals the volume of the dry ingredients!
Two of these, a glass of milk, and a small handful of nuts and raisins, and you've had breakfast. The original recipe put the nuts into the muffins, but we have no-crunchy-things-in-my-food-ers in our house. |

That sounds really yummy and banana-y! Too bad I haven't managed to have over-ripe bananas in years.
