freezing pumpkin pie filling??
 
I am baking 3 little pumpkins and a squash for pie right now. When I am done pureeing it, should I just freeze it as a puree, or can I actually make it into pie filling, and then freeze it?

Doesn't pumpkin pie filling usually involve eggs and or dairy? Those ingredients, as I understand, don't freeze particularly well. I think they separate a bit.

I have no experience doing this, just my thoughts on the ingredients.

I did thaw some pumpkin puree this weekend, and it was fast and uneventful.

oh true (about the eggs/milk - i think...) will i be able to get the puree nice and smooth without adding a liquid to it though???

I didn't add anything other than a little bit of water to help my blender along. I don't even think I added 1/4 Cup. We'll see how well it worked for me tonight. I'm making pumpkin bread with Rosemary this afternoon.

it purees up just fine after cooking. I stick mine in freezer bags in a "heaping" 1 cup amounts. which is usually what u need for recipes. plus if you just freeze the puree you can use it for other stuff like muffins, or pancakes. i have a jar in my fridge and i end up adding a scoop to all kinds of stuff :)

I just froze the plain puree since I didn't know (for sure) what it would be going int (pie, bread, muffins, etc).

I do this too. Yum, fall!

I have never had success freezing pies. The crusts always come out a little soggy and last year the pie separated from the shell so badly. I'd just freeze it in a bag and mix the pie filling later.
