Tonight is what we call Peanut butter noodles.
Peanut and Sesame Noodles 1 cup peanut butter 1.5 cups boiling water 4 to 5 tbs. vinegar (rice or cider) 2 medium cloves garlic, minced (I used more) 2 tbs. honey or sugar (I used honey) 1 tbs. soy sauce .5 tsp crushed red pepper (to taste) .5 tbs chinese sesame oil (any will work) optional .5 lb firm tofu, diced (if you use that, it is good to boil it after you mince it and before you use it... it makes it firmer. chicken would be good, too) 1 lb vermicelli noodles (I use whatever I have around) 1 med cucumber, peeled, seeded, and cut into thin strips 4 scallions, finely minced .75 cup minced cashews and/or peanuts, lightly toasted (I use regular unsalted peanuts, not minced or anything) Optional: minced fresh cilantro ( I have never used that) 1. Place the peanut butter in a medium-sized bowl. Add boiling water, and mix patiently with a spoon until blended. 2. Stir in vinegar, salt, garlic (see my note below), honey or sugar, sosauce, crushed red pepper, sesame oil, and tofu. Taste to adjust seasonings; set aside. 3 Cook the vermicelli in plenty of boiling water until just tender. Drain, and immediately transfer to a serving bowl. Pour the sauce over the top and toss with two forks. As you toss, add teh cucumber strips and minced scallions. 4. Serve immediately, topped with nuts and a sprinkling of cilantro. My note on garlic. this recipe calls for you to be using RAW garlic. DO NOT do that. We tried it the first time, and it is WAY too much (and we are garlic lovers, too). I just sautee it before adding it to the sauce and it is alot better. NOTES: We use whatever noodles I have on hand. I use cayene pepper in place of the pepper flakes. We blend the sauce using only 1 cup water. Much easier than mixing pb & water. :yes |

My mom made dinner tonight: roast beef, potatoes, green beans, corn, french bread, gf gravy, tossed salad, chocolate cupcakes and ice cream for dessert. :yum
Oh come to think of it, I didn't make lunch either: Sil made gf chicken strips, tater tots, and lettuce salad I love days when I don't have to cook, especially on vacation!!! :dance Save Save |

Regular ground beef (73/27) was on sale so that's what I got instead of the 85/15 I usually use for everything. I browned 2 lbs of meat, then drained off the fat, reserving some in a little bowl to do the veggies. Added the meat back to the pan, poured in about half a cup of water, some liquid smoke, and added two packets of generic fajita seasoning. Mixed it and simmered until the seasonings were evenly distributed and the water was evaporated. Took it out of the pan with a slotted spoon and put it in a big bowl. I added some of the reserved fat into the pan, more liquid smoke, and sauteed 1 lb of frozen bell pepper strips + about 3/4 cup frozen chopped onions. When it was tender, I put it in the bowl with the ground beef and mixed it all together. I topped my serving with some shredded Mexican blend cheese. After I took the pic, my eating companion realized we had forgotten the sour cream :jawdrop so I put mine on the side. I bought a can of "refried black beans with lime" and topped them with the same cheese. I also put some of the mango salsa on my beans. They were so good! Avocados were on sale for 69¢. The big green wedges on my plate are each 1/4 of an avocado :-) |
