Tonight is IP sesame noodles with chicken added. I'm making it now and kids will be reheating due to a tight schedule tonight.

I made salmon in the Instant Pot tonight. Everyone else had hot dogs and buffalo burgers we were given. The salmon was great! I was VERY pleasantly surprised.

Most of the week has been cold so lots of soup. I did chicken thighs in cockpot Sunday and has lots of meat left. So Monday was soup made with homemade chicken broth, chicken, and mixed veggies.

The next night was veggie soup with organic soup bone. A cheap way to get organic meat. There was quite a bit on it.

Last night it was marinated chicken sauteed with veggies. Just a quick meal since DH has sent sandwiches for the kids' lunches.

I'm doing Paleo so meat and veggies are my meal. It annoys my bread-loving family.

Tonight after going to sign papers so the body shop with actually assign a time slot to work on our van ( March 12) we went out to Chipotle to celebrate dh's new job.

Except I felt only 2 pieces fit well. And I did 7 minutes because I couldn't believe that 5 was enough. 5 probably would have been enough :giggle

Coconut crusted salmon & rice. Normally I do coconut rice, but I forgot tonight. Plain rice it is. :sigh

I need to get better at adding sides/veggies.

I do. :)

Sesame Noodles

I use regular spaghetti noodles and add a bit more water. I also don't use as much canola oil as called for. We add cooked chicken to round it out.

I kind of made it up.

Two small onions diced up and sateaed in a bit of oil near the end I added a chopped clove of garlic.

Once the onion was done I added a 1lb bag of frozen cauliflower and three small potatoes peeled and diced ( this time it was two russets and one white - but I normally don't with all 'waxie' potatoes). And two cups of water.

I let that boil for 15 min, then transfered all of that to the blender and made it smooth adding unsweetened coconut milk as needed. ( This is my standard base for 'cream' soups - potato soup, corn chowder, broccoli)

While blending I tossed the cubed ham in to the pan to brown a bit and then added the puree back to the pan.

From there I added most of a huge bag of frozen corn ( it must have been close to 4c - I would have preferred a bit less but children really thought we needed more), adjusted the thickness with coconut milk and then seasoned with salt and pepper.

That sounds good! I used coconut milk in place of heavy cream the other day in a tomato soup recipe, and it was every bit as good.

Tonight my dd requested hash browns and bacon for dinner, and I added a tray of roasted veggies...eggplant (good diced big and roasted!), onions, and carrots. I tossed with the dressing I made for sesame chicken salad before I roasted (olive oil, vinegar, soy sauce, fresh ginger and garlic).

Now I want to go out and get some eggplant! That sounds yummy.

We had homemade pizza - with individual combos of pepperoni, meatballs, mozzarella, and blue cheese.
