DS#1 wants to try being a vegetarian
The other morning DS#2 (17) said, out of the blue, that he wants to be healthier and thinks he might like to be a vegetarian and could I find some recipes to try. At first I was :jawdrop as its never something he's mentioned before but I told him I would find some recipes/sites etc that would help me as I am not the greatest cook at the best of times.
I did google searches but then I thought you ladies might be able to p lint me to some tried and true, simple recipes that I could start with. Thanks! :):) |

Well there's the obvious like pasta dishes and quesadillas. We like a simple rice and bean casserole, just leftover rice, a couple cans of beans, chopped onion and pepper and whatever seasonings sound good (usually salt, pepper, chili powder) topped with sliced veggies and cheese. Pile it into a big casserole dish and bake until the cheese is melted.
And there's stir fry. It can be simple, just chopped veggies and tofu with a simple sauce of soy sauce, honey and a dash of lemon/orange juice or you can make a more complicated sauce and turn it into a Thai or Indian style curry. Kids need me! Gotta run. |
