Jambalaya
2 cups of rice
32 ounces of beef stock 1 lb of sausage (smoked kind, andouille, etc.), or you can use a combination. Add 1/2 lb of ham and.or chicken. 2 large onions diced 2 bell peppers diced 3-4 stalks of celery diced 1 large can of diced tomatoes seasonings: salt, pepper, herbs de provence and sometimes a touch of cayenne. Saute the veggies just until done, add meat (I season the chicken at this point) and cook until almost done. Add beef broth and tomatoes and seasonings, bring to a boil. Add rice, bring to a boil. Turn off heat, cover and let cook. White rice about 20 minutes. Brown rice 45+ minutes. Serve with green salad and crusty artisan bread. |
