These are ovo-lacto, but most of the ingredients could be subbed for a comparable soy product
White Wine Pasta! Easy peasy, and really yummy. Seriously, it tastes impressive. 1 lg can crush tom 3/4 C white wine 3 TB olive oil 1-2 cloves crushed garlic 1 bunch fresh basil (the fresh really makes it ;) ) 1/3 C cream 2 boxes penne -pour several Tablespoons of olive oil in a pan, add fresh minced/crushed garlic until garlic start to look golden -add 3/4 C white cooking wine, simmer 3 min. -add can crushed tomatoes, bunch of fresh chopped basil, salt and pepper to taste -add 1/3 C cream just before combining with 2 boxes of penne cooked to al dente and drained well Serve with garlic bread...yum!! :yum Also, this recipe for Shepherd's Pie..modified with veggie crumbles instead of lamb/beef. :popcorn The pasta recipe sounds wonderful --we're trying (well *I'm* trying :lol) to work some more veggies in the diet, this thread should help :).

Butternut Squash Soup
1 butternut squashed, peeled and cut into 1" chunks 4 T butter, divided 1 small onion, chopped 6 C vegetable stock salt and pepper nutmeg 3 T maple syrup Melt 2 T butter in large pot. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Add the additional 2 T butter. Bring to a simmer and cook until squash is tender. Spoon ingredients in blender and puree. Season with salt, pepper, and maple syrup & nutmeg. |

Oh, and that pasta sounds AWESOME :rockon I'm g/f but have finally found decent g/f pasta so I'll have to try that.

Katie- we use DeBoles GF penne...I just make sure I cook it just to al dente, and rinse it well with cold water before using it. :heart

I've been using Mrs. Leepers (I always feel like a huge dork saying the name though) and their brown rice multi-coloured rotini can pretty much pass for "real" pasta.

They are the fake ground beef. They're in the frozen section. Boca and Morningstar both make them.

I'm making Sweet Potato Soup tonight. It is SO delicious, and freezes well. I always do a double batch. I was going to do a quad batch and freeze for baby meals, but I didn't buy enough sweet potatoes. :doh The secret is to let it cook 'til it's really creamy. I usually cook it at least an hour and a half, maybe two. It also improves the flavor to let the sweet potatoes really carmelize before you put them in the soup.
There's a bit of diary; I don't see a problem converting it if necessary. :) |
