New TF cookbook: Baking with rye!
 
I'm ordering this book! It's called "100% Rye" and it's got tons of recipes for baking with pure rye flour, no added wheat. The recipes are designed to be used with a traditional leavening process (sourdough) but variations are included for quick baking.

I've been wanting to learn how to bake with rye and *not* end up with a heavy dry brick, or over-kneaded, mushy, gluey bread. This author explains her techniques for getting a consistently great loaf. And she's got everything from fluffy pancakes to focaccia bread to brownies! I can't wait to read it!! Did you like the recipes?

I gave up on whole grain sourdough. I love it but my family preferred a lighter bread. So I use some commercial yeast when making 100% whole grain.

This is the opposite to sourdough (:lol) but I've had good results just switching in 100% rye to a variety of sweet breads and cakes.

We briefly had a reliable rye loaf, but then our flour source disappeared and the new flour was coarser. Think it was good last time we made it, but it was part of a giant holiday gift baking session so then there was tonnes of stuff to eat and the rye didn't really get eaten.

The recipes were great! It rose very well and made a pretty fluffy bread, especially considering it was whole grain. I think you can also buy a white version of rye flour.
