I think I'll make salmon patties tonight, with roasted broccoli and potatoes. Now I just need to remember how I make those without using eggs...:think

I made stuffed chicken breast -- with asparagus, red pepper, asiago cheese and basil pesto. :heart Served with broccoli. So amazingly delicious!

March Dinners
A dear friend came over this morning and helped me make a double batch of zucchini lasagna ❤️❤️ one pan will feed us tonight and another night and then I've got sauce for the freezer for quick and easy assembly postpartum. This is one of my family's fave meals but it is suuuuper labor intensive so there's no possible way I could do it at this point without a ton of help. Also - I clicklisted my groceries from Kroger and she picked them up for me and brought them to my house [emoji24]❤️ I'll try to remember to post a lasagna picture later.

We have both of DD's youth leaders over for dinner every Thursday before DD1's Bible study, and DD2's leader is a pescatarian...so I'm having to be creative and come up with new recipes because I didn't have enough non-meat meals in my rotation. So tonight I'm trying California Roll Sushi Bowls. Hope they turn out :nails. I always get nervous trying something new on non-family.

My 2 littles (8 and 10) brought friends home with them from school so I wanted to prepare something easy, economical, healthy AND mainstream kid friendly and appealing... So I went with sloppy joes. Classic American. With steamed broccoli on the side.

1st night of our new "kid take over meal plan and prep" plan with the 16 year old boy.
He did it all from the planning to the entire prep, with me just giving verbal guidance as needed (and it was indeed needed :lol ). I gave him a lot of leniency in the meal planning as it was his first time. Not the meal plan of my choice but we will work towards that. :yes Hot dogs (nitrate free at least) and mac and cheese (homemade).
