Your very easiest vegan snacks and meals
 
I need to cut back on animal protein, especially dairy.

But there's a theme that most of my go-to convenient foods are things like hard-boiled eggs, cheese sticks, yogurt, etc. :-/

What are your very easiest foods? I mean the kind you grab one-handed with a fussy baby, or on the way out the door with moments to spare, or MAYBE that you make ahead, but really and truly I do not mean dinners that require standing at the stove for an hour.

I also need to watch my sodium, so most convenience foods from the store are out. But if you have suggestions of store-bought things that aren't salty, let me know.

We do roasted nuts a lot, they have low and no sodium roasted nuts at trader Joe's.

The other thing that jumps to mind would be hummus and vegies.

I've been making the garbanzo bean based "cookie dough" from Chocolate Covered Katie's blog. I mix, drop in large spoonfuls on a cookie sheet and freeze. Then put into a large ziploc to take out later. The kids like eating it frozen. I'm okay either way.

garbanzo beans, plain or roasted

trail mix with edamame, nuts, dry cereal, dried fruit, etc.

banana or apple dipped in peanut butter

pita or tortilla pizza

zatarains dinner mixes

rice and beans

lara bars

pb banana chocolate smoothie

I try to keep a stash of single serve hummus and guacamole in the freezer for emergencies. Sometimes I make it, other times I buy it.

chia pudding (3T chia seeds to 1 can of coconut milk, maybe a little sweetener or flavor extract, maybe not. Shake in a mason jar and refrigerate overnight)

homemade lara bars - if I roll them in unsweetened cocoa my kids won't touch them :shifty

coconut chips (Trader joe's has good ones)

Roasting chick peas is super easy. My kids really like them. :yes You can season them any way you want. cinnamon sugar, taco, salt & pepper (I know that's not low sodium.)

For you as the adult? For me, my go to snack is always raw fruits or veggies. SO delicious and the options are endless! Nuts are another awesome option.

Yes, for me as an adult.

I need meals, too, but minimal stove time, and minimal prep. Had a hummus and lettuce sandwich the other day for lunch, for example.

Dump and bake recipes work pretty well when it's not too hot, like baked pasta (pound of pasta, jar of sauce, jar of water, bake until soft). I need more of these.

Something like peel and dice a lot of veggies, then saute, then measure more ingredients and stir constantly is not going to become a favorite recipe any time soon.

I'm really enjoying chili stuffed sweet potatoes right now. I cut them in half and place them half size down on a parchment lined baking sheet. Cook at 425 till they get bubbly underneath. My kids favorite chili is pretty easy. Sauté peppers, onion etc with some chili powder and cumin or a packet of chili spices. You can get those frozen now. Then dump in a can or two of roasted tomatoes. Then cans of beans and chili beans. I just use a fork to fluff the potatoes and add the chili and toppings.

Chickpea salad can be made in the food processor. Eaten alone or on crackers.

I love my food processor!

Curry sauces in a jar are fast. Just add what you like and you can cook in a crockpot. I like cubes of potato and red beans. Serve over rice.

I always try to portion out some small bowls/containers of food before we eat. That way we have some snacks or something I can toss in my husband's lunch.
