Broiled veggies and pork wraps
This is what I threw together the other night and it turned out FABULOUS! I couldn't wait to eat the leftovers last night!
I didn't chronicle the pork part, I didn't think of it at the time - but I had some pork cutlets I bought on sale. I rubbed them with a mix of cumin, chili powder, salt, pepper, a dash of honey and the juice of a lime. Then I broiled them. Then I took veggies: http://img.photobucket.com/albums/v4...od/veggies.jpg yellow squash and zucchni, chopped them up. an onion and a small 'bunch' of broccoli - chopped them up: http://img.photobucket.com/albums/v4...od/chopped.jpg marinated in: http://img.photobucket.com/albums/v4...ngredients.jpg olive oil, balsamic vinegar, salt, pepper, touch of sugar - Stirred it all up: http://img.photobucket.com/albums/v4.../food/stir.jpg marinated for 10 minutes then put on a sheet covered with tin foil and broiled: http://img.photobucket.com/albums/v4...d/broiling.jpg til they were all crispy (stirred once during) then served on tortilla with the pork sliced thin: http://img.photobucket.com/albums/v4...od/onplate.jpg we used a tiny bit of sour cream on them - rolled them up - and YUM!! They were so good and so good for you! :) (sorry the pics are so big then so small and generally blurry - the setting on my camera was flipped to portrait!) |
