Brussel sprouts are one of my happiest veggies on earth. For some strange reason I'm the only one who loves them. Everyone else claims they stink up the house. :-/ :shifty Do not fret -- it does not avert me in the slightest. :shifty :lol
Anyway, tonight we had beef and veggie strogonoff over zucchini noodles for the adults and mashed potatoes for the kids. :heart With, ironically enough, roasted brussel sprouts for me and roasted mixed veggies for the other crazies in my family. ;) |

I didn't like them growing up. Which always baffled me, because there are very few foods I don't like! My mom made them occasionally and I always tried them, determined that I would like them. Nope :p
My boyfriend made them a few months ago and I loved them! :jawdrop Now I have to eat them at least once a week :doh |

It seems like everyone's mom used to steam mushy Brussels sprouts, and it's no wonder we didn't like them. Roasted or sautéed with shallots is a whole different thing.
Tonight I made soup with potatoes, leftover bits of steak, rosemary, chicken stock, and coconut milk. I used the hand blender to puree a bit of it. And I made gluten free biscuits with lots of shredded cheese. The crispy cheese made them yummy in spite of the gumminess. ;) |

I made sausage carbonara over tortellini with steamed broccoli on the side. Littlest, who usually eats only the starch or the meat ate only a bowl of broccoli. Go figure!

I have Japanese Eggplant that I'm going to do on the grill pan. Not sure what I'll put on top of it, though. I'm thinking maybe cheeseburger flavors (ground beef and cheddar) or possibly Caprese salad (tomato, mozzarella, and basil).

I ended up changing course. :giggle
I still grilled the Japanese eggplant but topped it with olive tapenade and ricotta cheese (or plain, or with cheddar cheese for the picky ones). I garnished with grilled lemons for me and the kids stole them and then fought over them! <Grumblegrumble> A couple of years ago I discovered a Moroccan stew made from chick peas and carrots - it's seasoned with ginger, turmeric, and cinnamon and it's just delicious! I didn't have chick peas, though so I subbed lentils and it was almost as good. That over rice for those who wanted rice. Only complainer was Littlest, but she's four. |
