Can anybody help? Making bread...
 
I hope this is the right place to put this. I'm trying to make my own bread. I want to make whole wheat or multigrain, but no matter what I do it will not rise. I have a bread maker (although I have tried making it without) and I've followed several recipes (specifically for bread machines and not). Is there some trick? Anyone have a new recipe for me to try?

Are you using freshly milled flour or the bagged kind?

Yes. I think the latest recipe was one tbsp per cup of flour.

It's the bulk kind...I guess that's the same as bagged, right?

I have a great honey-wheat recipe that I'll try to find tonight, if I remember. :lol

It uses white and wheat flour and honey of course. And I use Fleishmann's yeast. Of course - used to, I should say as I probably won't be devoting the time to this for a while with baby.

Warning - the bread takes 3 hours from start to finish with the multiple risings you have to let it do! But it is yummy!

Love t he smell of fresh bread :yes

I usually add gluten - but I see you have been doing that.

The other thing I have done is add an extra knead in to my ww bread. When the machine gets to the rest after the first knead, you
just reset it to start over so it kneads one extra time.

Your sweetener will help it rise - do you have sugar, molasses, or honey in the recipe?

did it rise a little or not at all? If not at all, your water may have been too hot and killed the yeast. If just a little then you need to tweak the recipe if you want a higher rising WW bread. I would tweak the specific recipe without the breadmaker and then use it only after it's right.

WW bread is one of those things that's a bit hard to get right. Especially a loaf of bread that keeps well and tastes good when not hot and slathered with butter.

Finally I found a recipe that worked! It's a beautiful honey and oat bran recipe. Even my kids like it. Yay!!!

I just figured you were all such experts you wouldn't want a new recipe. :giggle

1 1/2 cups water
2 tablespoons of oil
1/4 cup honey (or other liquid sweetener)
4 cups whole wheat bread flour (I used machine bread flour...didn't know it existed)
1/2 cup of oat bran (or other bran)
1/2 cup nonfat milk powder
4 tablespoons vital gluten
1 teaspoon salt
2 1/2 teaspoons yeast

I put it on the grain setting of my machine and it's wonderful. Good the next day as well.
