Could I make this without the burrito shells? I was thinking of making them and eating them with chips, what do you think? We have to switch from pinto beans to kidney beans for awhile and I love chips in refried beans. This sounds yummy.

:yum I have a recipe that I make from the Moosewood Low-Fat Favorites cookbook that's vegan and uses black beans, cilantro and more traditional burrito seasonings. So yummy... but Julius will not eat anything with beans. :/

maybe you can make them with those soft corn tortillas? or can you still have corn? :O

We technically can still have corn, but when JJ had a bunch of corn last week, he went crazy and got the anal ring rash. :rolleyes So, now I'm not sure about corn, among the million other things. :scratch That leaves thing about as clear as mud, huh!?

Looks great! We'll have to try them! Right now, I can't have onion or garlic. I know Luke is sensitive at least somewhat, so, for now, I'm eliminating them completely (and we used to eat garlic and onions ALL the time!) We also don't do soy, but maybe some balsamic vinegar would be good! :think

I made them and they were great. My dh doesn't really care for sweet potatoes, but since there was more bean mixture than potato mixture, he thought they were good. :yum
