Ham Cups
Wonderful for breakfast, and can be made in large batches (but individual portions) and stuck in the fridge or freezer for later in the week.
6 slices ham 1/2 c. chopped green onions 1 8oz carton plain yogurt 2 cups cheddar cheese 6 eggs 2 Tbsp parsley Place one slice of ham into the cups of a cupcake pan. Sprinkle the bottom with the onions, then 1/2 the cheese In a seperate bowl, whisk eggs and yogurt. Pour evenly into cups. Sprinkle with parlsy and remaining cheese Bake at 350* 25-30 minutes I've replaced the yogurt with lowfat sour cream and its turned out delicious. I've also added spinache with the onions. I think you would be able to add in your favorite quiche recipe into the cups as well. Our family really enjoys these things. :) |

Oooh, sounds good! I'd use turkey instead of ham, but I bet it would still be really good!

Those sound really good. We don't eat pork, but I could imagine several things instead of ham. Even a good veggie cup would be good, I bet.
