Taco Soup
I made taco soup and pumpkin muffins last night for dinner. It was a perfect pairing. I like a brothy type of taco soup. Most of what I saw online was like chili. I like the broth to soften up the pile of chips I put in the bottom.
1 large can of chili beans 1 can black beans 1 can kidney beans 1 can hominy 1 can fired roasted tomatoes Cover all of this with unchicken broth. Cook for awhile to meld flavors. Works great in a crockpot. Serve with sour cream, avocado, cilantro, fresh lime wedges, tortilla chips, sliced green onions, and radishes. |

I usually add frozen squash to my vegetable soup. It melts down and gives it a really great broth. I wonder if pumpkin would do the same thing? I have thought about chunks of yam.

I have a recipe that I love for vegetarian chili that has chunks of butternut squash in it. I totally think any of those orange vita a veggies would taste good with the taco soup. :rockon

I put in the spices that are intended for taco meat.
