I have been cooking an instapot chicken and rice soup recipe that calls for 1 lb chicken, 1/2 cup rice and 1.5 cups broth (and onions, celery, seasonings, etc.). My family loves it. Actually, they like it so much that we need more rice and broth. Does anyone know if I double the rice and broth, if the cooking time stays the same?

Yes, Id think so.

Rice cooks in 12 minutes in mine no matter how much I cook.

Just a re-iteration of the answer you've already received. I double rice and broth recipes regularly and cooking time is the same. It will work well.

I find the IP to be very forgiving. Plus every recipe is a bit of a learning curve. You try something and then tweak it to personal preferences. For example my family always like a little extra saucy when it comes to recipes so I usually add more broth than they call for anyway.
