Does anyone have a fantastic vanilla cake recipe that is actually light and fluffy? I've tried a bunch, and while some are pretty good, I haven't found that "perfect" recipe. :)

I'll bet your library has it. Used copies are cheap, too. There are a couple of recipes in it for white cakes and one yellow that are flavored with vanilla that I make all the time.

I have a to-die-for chocolate cake recipe so I'm hoping to try some of the ones here.

I will put in a plug for Sally's Baking Addiction. Every recipe of her's has been wonderful. Also Ina Garten/Barefoot Contessa. I've never had a flop from her, either.

I abhor ethe almond extract taste in it. It's very moist.

I made rainbow cupcakes with dye free dye. Daughter thrilled. Birthday cupcakes for dance.

I don't have a really light and fluffy one, this is more of a backyard barbeque single layer one. It's fairly dense, but delicious. I've never used their icing, I've made my regular frosting for it.

I have a great vanilla cake recipe, but it is gluten free I have no idea if it would work to use normal flour.
