Oh my goodness, y'all, this is the best veggie soup ever. The flavors are amazing, so if you are looking to up your veggie intake, you might want to try this one! I made one change - I added a handful of sliced mini bell peppers.

Do you use fresh or dried herbs?

Dried herbs since that is what I have on hand. I may have made it once with fresh sage when I had sage in my garden.

Thank you! The link still wouldn't work for me for some reason - it's not broken as such, but it doesn't take me to the exact recipe :scratch. The screen shots are great so I hope they're not a copyright violation!

It is a copyright violation and so I have put this recipe in my own words and am posting it here for those who can't see the link:
Tuscan Vegetable Soup
1 can canellini beans, drained
1 TBSP olive oil
1/2 large onion
2 carrots, diced
2 stalks celery, diced
1 small zucchini, diced
1 garlic clove, minced
1 TBSP fresh thyme leaves, chopped (or 1 tsp dried)
2 tsp fresh sage, chopped (or 1/2 tsp dried)
1/2 tsp salt
1/4 tsp pepper
32 oz chicken or vegetable broth
1 can diced tomatoes, undrained
2 cup chopped baby spinach
1/3 cup grated Parmesan, optional
Mash half of beans and set aside. Heat oil in soup pot over med-hi heat. Saute onion, carrots, celery, zucchini, garlic, thyme, sage, salt and pepper until tender, about 5 mins. Add broth and tomatoes and bring to a boil. Add mashed and whole beans and spinach and cook until spinach is wilted, about 3 mins. Top each serving with Parmesan cheese if you'd like.
