View Full Version : Sheet Pan Dinners

Are these new or have they been around a long time? I've just recently heard of them, and I can't think of anything easier than the clean up of one pan after dinner. :rockon

I'd love it if you'd share sheet pan recipes that you've seen that looked good, sheet pan recipes that you've tried, or sheet pan recipes you want to try. It would be fun to get a good list going.

I"ll be back with recipes.

One Pan Autumn Chicken Dinner (https://www.pinterest.com/pin/367747125807051598/)
Kielbasa and Sauerkraut (https://www.pinterest.com/pin/367747125807051598/) - although I would use nitrate-free chicken or turkey sausages

I love sheet pan dinners but I always forget to put them on the menu. :doh

Our favorite is Salmon with Asparagus and Potatoes. (http://www.simplyrecipes.com/recipes/oven_roasted_salmon_asparagus_and_new_potatoes/) I'm sure I have others but I can't think of them ATM.

There's a book called Sheet Pan Suppers by Molly Gilbert that's really good. I've gotten it quite a few times from the library. Not all of the recipes are dinners but the recipes I've tried are good.

I have been trying to work out exactly what a sheet pan is. I will have to look for one, I don't have one that's quite the same as those. I just use my grill pan in the oven when I bake a large amount like roast vegetables for the family.

What is your recipe, Sal?

SalH

I will see if I can find it online, it's one I tried a few years ago and really liked it, but basically it's chicken thigh, onion, garlic cloves, Chunks of potato, and cherry tomatoes added later. Balsamic vinegar and olive oil and a sprinkle of brown sugar. I just throw in what I fancy these days so sweet potato and carrot tend to go in everything I roast.

I was just looking at Cooking Classy before I came over here, and I was admiring the sheet pan dinner that is the latest post.
I love cooking on my stoneware bar pan. I really need to get a second pan, though, because one doesn't hold quite enough for us.
Two pans would fit in the oven perfectly.

Anyway, I have made similar things that I just call "tired mom meal" because I can set it in there any forget it. I have just cut up chicken breasts and tossed them in whatever oil/seasoning I did the veggies in and added them to the pan. I sometimes add some chick peas, and serve it over rice, quinoa, or couscous.

Those all look much better, LOL.

Pampered Chef Stoneware Bar Pan.

It is the size of a jelly roll pan, I think.
I love it because it is so seasoned, nothing sticks and nothing burns (not even cookies!) and it is easy to clean. Mine is deep brown and black now. I don't remember it looking light brown like that one!
Also, mine has a look more like the medium bar pan, with the built in handles.

They do shallow-ish roasting dishes so I think that would be my next thing.

Yes dovenoir I cook my recipe I shared above in a glass or ceramic dish normally.

I have an oven tray for Swiss roll (never used it for that) but I think it's a tad too shallow.

The theory looks amazing, but I'm not sure on the application just simply due to size. I struggle to envision being able to put enough food on one roasting pan for my family. :think

I roast veggies regularly, and it takes the whole pan to just do those. :think

But maybe I eat an irregular amount of roasted veggies for dinner.... Which could very well be true. :shifty :giggle

I'd love to see some pictures of the actual dinners on the pan for anyone who is willing to share.

One of my kids will not eat anything with meat juice on it, so this is a good point. I did roasted sweet potatoes last night, and it took up my whole 9x13 glass cake pan.

I love these ideas! I'm trying to do more meals that I can do prep work on during the weekend to make them easy to get in the oven after work. A lot of these could be done that way (just put in baggies in the fridge and then dump in sheet pan). I would need 2 sheet pans to feed my family, but have a convection feature on my oven, so I think it's doable.

I love this idea too! I also can use a whole 9x13 pan for vegetables, especially since you don't want them all on top of each other.
Does this need to be one of the metal sheet pans, like a cookie sheet, but with edges? Shallow and large? I don't have any like that- just 9x13 glass and metal pans. They probably aren't that expensive. Hmmm... I need to come back to this and get recipes!

30 minutes?

A little less. The potatoes take 20-25. After I put them in, I cut up the other veggies and arranged them with the kielbasa (which comes fully cooked). I think the temp was about 425. I took everything out at the same time.

I didn't use worcestershire sauce in my first batch. I used pureed peaches in their juice instead of preserves. I "marinated" it in the sense that I threw it all in a freezer bag :giggle and froze it ahead of time.

Sweet Peach and Mustard Grilled Pork Chops

What you need:
• 3 tbsp stone ground mustard
• 2 tbsp lime juice
• 4 tbsp organic peach preserve (or 3 tbsp fresh diced peaches + 1 tbsp honey)
• 1 tsp. Worcestershire sauce
• 1/4 tsp. onion powder
• 2 tbsp orange juice

What you do:
1. If possible, marinade your pork chops in lime juice and a pinch of salt for an hour prior to grilling.
2. Mix all ingredients together to make glaze.
3. Place chops on medium-high grill and baste with mustard glaze.
4. Cook 4-5 minutes and flip.
5. Coat other side with glaze and cook an additional 4-5 minutes.
6. If concerned about done-ness, cut one chop and check center for pinkness.

---------- Post added at 10:09 AM ---------- Previous post was at 10:08 AM ----------

Oh, and I didn't grill it. Probably obvious :giggle I did the sheet pan version.

Sure! Toss with a small amount of olive oil. Season as desired - I usually use my garlic pepper grinder and a bit of Costco's salt free seasoning. Bake at 350-375 for about 20 minutes.

Sorry if that's vague. I read the instructions online a few years ago and I tend to just wing it. I just try not to over-do the olive oil, because in my experience they don't turn out as well.

Petite sirloin steak has been on sale all summer so I have a lot of that. I used leftovers from grilled steak to make this. I sliced it thinly and didn't bake it as long add the vegetables. It was good. I wouldn't buy steak specially for this recipe but I'll make this again with leftover steak.

Can we make a list of veggies that work well for a sheet pan dinner? Most recipes seem to include either green beans, broccoli, brussel sprouts or asparagus. Any other veggies you've used in your sheet pan dinners to add more variety?

I think Bell Peppers (any color— I buy them in packs of red, green, and yellow mixed) work well.

Potatoes, cauliflower, zucchini, grape tomatoes, baby carrots, I use pretty much anything

Cabbage also works well.

I don't think there is a hearty vegetable that wouldn't work.

I wouldn't try leaves, like spinach or kale, but everything else is fair game.

I like combining brussel sprouts, rutabaga (or turnip), potatoes (fingerling or regular, with skin), carrots and (I think) mushrooms, though I leave them whole or halved and *think* I add them near the end.
