I'm really struggling with lunches at the moment and I wondered if anyone had suggestions to share! I'd ideally like something that can be prepared in under 30 minutes, or can be prepared first thing and left while we do school. I'm not looking for main meals, just something more substantial than the bread and salad (usually with cheese or fish) that we tend to have the rest of the year.

Could you do some simple crock pot meals? Chili? Chicken breast and veggies?

Or on the stove top, anything pasta is quick and warm.

I make a large pot of soup from time to time.

This week, I made minestrone.

These all sound good!

We do have pasta and soup sometimes, but I could do with experimenting with recipes a bit because I'm bored of them! And we do have leftovers if we have any, but there's often not much left (or at least not enough to feed four people, even if I plan to make extra!).

Frittatta? Pasta bake? Baked potatoes (quick scrub in the am, on slow until lunch?)

I'm a fan of batch cooking lunches to reheat quickly

we often enjoy tomato soup in a mug with a grilled sandwich.
