Does anyone have a good recipe for pecan pie that doesn't include corn syrup? Can honey be subbed?

I've used maple syrup and it was delicious! http://nourishedkitchen.com/maple-pecan-pie/ I would imagine there are other options out there (try a paleo seach and then put the filling in a regular crust).

I have never tried this particular recipe, but I have liked the other recipes I have made from her site. She uses honey instead of corn syrup!

Our family has always done a more custard base (basically brown sugar and eggs) rather than corn syrup or other alternatives.

basis is brown sugar and white sugar flour, eggs, butter and vanilla mix and pour into crust of choice add pecans (or add to mixture before pouring doesn't really matter..

cook then cool its actually a really simple recipe assuming one is still okay with like Eggs flour etc... :giggle

It works with rice syrup, but I've not tried it with anything else other than simple syrup (http://www.food.com/recipe/homemade-corn-syrup-substitute-simple-syrup-74080). It's a bit different with both of those, but not enough that you'd notice too terribly.

I'm curious how it would be done with honey and if that influences the taste a lot.

I've done it with local canned cane syrup. This is sugar cane land so I'm not sure if you have anything similar where you are, or if you can get it in.
