View Full Version : Grain Free Banana Pumpkin Pancakes

In a blender/food processor combine
1ripe banana
1/3 C Pumpkin Purée (canned)
1T cinnamon
1t pumpkin pie spice
5 eggs
3-4pinches of baking soda
2T coconut flour (to thicken slightly)
Whip until eggs seem like they'll fluff (30seconds?)
There's your pancake batter. It made about :think about 10-12 pancakes.

Are they pancake-y, or dense? I'm having a hard time with grainfree pancakes.

I think so. But I've been gf for 2.5years....so my taste buds might be weird.:think

they're very fluffy and pancake I think. Not too dense I don't think.

so would they work if I substituted rice flour for the coconut? I dont' have any on hand. mostly need them to be GF.
The reason I asked about taste is because even with boxed mixes I've yet to have my pancakes come out tasting good ;-) But this sounds VERY VERY yummy :ty

I would do maybe 1T of rice flour and the other tablespoon being tapioca or corn starch.
