I will have to come back to give recipe links, but here are some meals I make in the crockpot:

Roasted corn and tomato soup
Moroccan lentil soup
Butternut squash soup
Roasted garlic potato soup
Black bean soup
Broccoli cheddar soup

Yesterday I made split pea soup in my crock pot. Today it was minestrone. I'm on a crock pot soup kick. :)

Curried chick peas or lentils, lentil rice casserole, lentil soup, taco soup, potato soup, and refried beans are all hits as well. You can also make bread and cobblers in the crock pot.

saute an onion in oil or lime juice add 3/4 tsp cumin 1 tsp chili powder. Put in crock pot with one can of pinto beans, one can of black beans, two cans of diced tomatoes and some frozen corn. Put a bunch of it in the blender, blend, then return it to the soup. Add fresh cilantro if you like. Serve with crushed tortilla chips.

This sounds yum!

About how much do you blend? I'm assuming just leave enough unblended to make it chunky?

I blend as much as fits in my blender, which is about 4 cups. You can also make it quite easily on the stovetop, obviously, if you're in a hurry.

I usually cook dry beans (black or pinto) in the crockpot once a week (soak beans overnight, then put in crockpot with water and let cook all day).

We have beans and rice for supper the night I cook the beans, and then we often have taco soup (http://broadhorizonsschool.blogspot.com/2012/04/crockpot-taco-soup.html) for lunch the next day.

Tomato soup (http://broadhorizonsschool.blogspot.com/2013/08/recipe-delicious-tomato-soup.html) is another favorite crockpot recipe for lunch.

And baked potatoes in the crockpot, I don't bother with foil, just rub with oil and salt and put in the crock.
