View Full Version : I need a blueberry muffin recipe.

Mine is not working! They taste okay but they don't rise well, then they sink down.

I haven't made these for a long time, but my friend gave this to me a long time ago. I remember her husband being on a mission trip and saying that he wanted to be greeted by these muffins when he got home…they were THAT good to him :lol.

Her tweaks--"I substituted buttermilk for the milk and added 1/2 tsp vanilla. Also used brown sugar instead of white for the topping and coconut oil for butter and vegetable oil"

I have that recipe! :giggle That is the one my son likes. I don't like the mess of doing the topping, but they really need it.

The other recipe I've used the past 3-4 times, did well at first and now for some reason does not.

I'll try the "to die for" ones again.

Those look good too. I'll have to try them both.

The one I like the flavor of I am using lemon juice and zest in them, but they are fall flat and are just a mess!

My favorite recipe is the type where you open a package and add water. But that's not real and isn't exactly a recipe ;) subbing for these recipes

What kind of a bowl are you using? Is it the kind of blueberry muffins that need whipped egg whites? I think you can deflate those by using a plastic bowl, as it can have some soap or oil residue.

Check your baking soda/powder. I know it's time to buy new stuff when my baking doesn't rise, and then it works again! :tu

Just checked the baking powder. I bought it recently, the exp. date is Feb. 2015.

I wonder if I first made these in a glass mixing bowl. Can't remember.

These other recipes look good though, going to try them.
