We need more green veggies in our diets and need some ideas (except for broccoli, we're overdosing on broccoli :giggle)

What are your faves?

Spinach scrambled in with eggs and mushrooms for breakfast or lunch.
Any leafy veggie in a smoothie.
raw peppers (with dip?) for a snack
roasted fresh green beans

Spinach salads - add in some fresh berries or dried ones to get the kids on board.

green smoothies,
onion & spinach in fried eggs

those are the two that the kids like best.

asparagus stir fried with oil and butter, garlic, s&p (also works well with sweet potatoes!)

I actually like to slice red/orange/yellow peppers and use them to dip in hummus

Spinach/cucumber/strawberry/feta salad with balsamic. :yum DH likes a spinach salad with tomatoes, bacon (I know, I know!), a little cheddar and broccoli. SOmetimes sliced button mushrooms.

Green smoothies, just the basic greens + banana + water.

Kale cooked down a bit and served with beans and quinoa. Probably any green, but I like kale for this.

The plate of hummus and handfuls of different veggies is still popular with DS.

Oh, and if you like fish: Take your favorite white fish and place it, raw and thawed, on a baking pan full of spinach. Throw some whole cherry tomatoes on if you have them. Dot with butter, salt/pepper/garlic powder. Squeeze a lemon over the whole thing, cover with foil, and pop in the oven at 350 for thirty minutes/until the fish flakes. Serve over rice. Super yum.

We usually have kale once or twice a week as "greens." I boil the kale for a minute or two, drain and add to a pan of sauteing onions and garlic (bacon too if I have it). Add some liquid (I like to use homemade chicken stock) and let it simmer for 20 minutes or so. :yum

Stir fry with bok choy or baby bok choy, onions or scallions, garlic, and whatever else you like, with peanut sauce.

Steamed kale, collards, chard, spinach, broccoli rage, really any green. Kids like flavored vinegar on top, occasionally I add snips of dried fruit at the end of the cooking. I prefer with just a squeeze of lemon juice. (When I say steamed, what I actually do is simmer it covered in a little broth, to me I "steam" in the pot but I suppose this is technically braising or some other term. It's not boiling because I don't have water to discard when the cooking is done).

Do you like Brussels sprouts? There are a lot of great ways to make them.

Homemade kale chips, very easy.

Salads.

Cauliflower obviously isn't green, but it's in the same family as some of the greenies and is very good for you and usually acceptable to kids. You can mash it and eat like mashed potatoes, put it into sauces, bake it with other things...

Kale and spinach chips are some of our favorites.. my kids inhale them.
