Cauliflower "potato" salad

I tried subbing steamed cauliflower for the potatoes in my favorite potato salad recipe and it turned out pretty good. The texture is a little off, but overall it is a great sub for potatoes in potato salad. :rockon

You can also make mashed potatos out of steamed cauliflower

I love cauliflower mash.. I actually think it's more flavorful than mashed potatoes!
