I think that there is still a section in the Cookbook forum here with regional recipes. I posted a ton of Syrian recipes a long time ago that do use red meat or chicken, but the meat is more for flavor, rather than the main attraction. They are generally eaten with pita bread or rice and contain vegetables.

Add ground beef to your spaghetti sauce or make meatballs for same.

With ground beef you can make tacos, meatballs of all varieties, chili, sloppy joes, lasagna, spaghetti, shepherd's pie, cabbage rolls, stuffed squash, and, of course, hamburgers...

With a cheap steak cuts you can make fajitas, stroganoff, stir fry, beef kabobs, steak salad...

With roast cuts you can make pot roast, beef stew, brisket, London broil, roast beef au jus...

And, of course, there's always grilled/broiled steak :)
