I've had way too many squash and pumpkins around here lately.
Today I made bread, mini muffins and mini loaves with pureed roasted acorn squash. I threw in chocolate chips, hoping to make them more inviting for the kids.
I just tasted a mini muffin--not bad. I hope the kids like them.
Here's (http://www.mybakingaddiction.com/butternut-squash-bread/) the recipe; I just stirred in the chocolate chips at the end and subbed acorn squash for butternut squash.
