I think that's what it is called- the cone-ish thing you mash things through, like for jelly? Can you tell that this is not my area of expertise or even familiarity?

Can anyone recommend a specific chinois or let me know what features to look for when buying?

I'd recommend just looking at amazon at the ones they have, and reading the reviews. Looks like there are ones that are mesh--true chinois--and they will finely strain things so there is no pulp or tiny seeds. The china cap styles are metal and have larger holes that won't strain as fine.

Ultimately it's just a cone shaped strainer with a pestle to push stuff through on a stand. :shrug3
