It seems to have been decided as a "safer" sweetener by some stores here - what's it made from and what safety data is available?

There is basically no safety data. If it's "safer" then that's because they haven't tested it to find out what harm it does. I will not eat it or let my kids have it, ever (and I let them have all kinds of stuff that some people here would be shocked about- kraft macaroni and cheese, oreos, etc)

I won't use any substitute sweeteners (except I might *possibly* be ok with unrefined stevia if given that as the only option). Sucralose is Splenda, right?

yes Sucralose is Splenda.

I won't touch it either. Dh doesn't mind but I don't let the kids eat it...

It's made from corn

I keep getting this feeling that the government has so heavily subsidized corn that they are freaking out and frantically trying to get rid of it so they are finding more and more ways to market it to us under different names. My favorite is when a product has 5-7 "ingredients" that are really corn :rolleyes
