Early Bird has been reading Little Bear.

When I asked her what she wants to eat for real food at her birthday party she said "Birthday Soup" when I ask what goes in Birthday soup she gives me the list from the book: carrots and potatoes, peas and tomatoes.

So do any of you have a good recipe for soup that has carrots and potatoes, peas and tomatoes?

We are dairy free and the carrots need to not be pureed, Early Bird reacts to them, I need to be able to pull most of them out of her bowel.

Some how just throwing those in to a broth (I have a home made chicken broth that I am working on right now made) doesn't seam like enough for soup to serve guest.

I think you could easily add some peas to this recipe.

My Grandma's Hamburger Vegetable Soup Recipe

1 lb. ground beef
1 cup diced onion
1 cup diced potatoes
1 cup sliced carrots
1 cup sliced celery
4 cups cooked tomatoes (canned whole tomatoes work)
1/4 cup uncooked rice
3 cups water
1 tsp salt
1/4 tsp basil
1/4 tsp thyme
1 bay leaf

Brown the ground beef and onion, drain off fat when browned. Combine meat mixture and rest of ingredients in a large kettle. Simmer, covered, for 1 hour. It can easily be frozen in small batches.
