View Full Version : Need Cuban food advice

I made this ropa vieja today and it was quite scrumptious. However, the flavors weren't quite bold enough. My local Cuban restaurant's version is Explode In Your Mouth yummy. Ideas about how to punch this up?

I was thinking of adding red wine to the mix.

Haha! I think that's the exact recipe I tried. It was really good, but I agree, needed for spice or something. I'm curious what others say because I really want to make it again, but I really want it to pop!

IME, there would be considerably more garlic, cilantro and maybe other things added
:shifty like at least six cloves of garlic and a tablespoon or so of cilantro. And a bit of salt. :shifty

WAnted to say, this was much better the second day. The flavors needed to ripen.

Yeah I would really up the garlic. I might add a little teeny bit of hot chili flakes. Like ten flakes. Crushed up. I was shocked as to how much flavor can be packed into those tiny little flakes without making a dish spicy. I'd also up the cilantro, but I tend to eat that stuff like parsley. So good.
