Soba Noodle Recipe

I'll be subbing tempeh for the tofu and I might be subbing peanut butter for the almond butter if I don't have enough almond butter. I'll post later to let you know how it went.

I found a package of soba noodles for 40 cents last week at a discount grocery store, so I am excited to incorporate them into a recipe.

That is so funny, just the other week I used soba noodles and tempeh for the first time and made a stir fry with them!

My almond butter was old and stale, so I did use peanut butter and peanuts. Oh, yum! There is just enough left over for my lunch tomorrow.
