View Full Version : I want to make random soup

and for some odd reason, I can't find a recipe for that :shifty

i want to use my new immersion blender, and I want to put in potatoes and other veggies. I have veggie stock and milk substitutes. I think I'm gonna cook it all up and blend it. Any advice?:shifty

Basic soup: saute your aromatics (onions, garlic and similar) in oil to get the flavor locked into the oil, add fresh ground spices and then use the spiced oil to thoroughly coat uniformly chopped veggies to get flavor throughout. Cover plus a half inch with stock, simmer til tender. Stick blender all for creamy soup, blend just half and stir for chunky soup. Add dairy ingredients just before serving.

The above was taught to me by a naturopath in HI that I took a short series of cooking classes from. It works with just about any sort of spice profile, with any kind of veggie soup. My faves are the potato soup I have posted around here somewhere, and a carrot and potato version that's spiced with fresh-ground toasted cumin and coriander and something else I can't remember. :giggle Indian-y and oh-so-warming.

The high was a 95 today and it was breezy, so that feels downright cool after 110 last week. I feel like making chicken and dumplings this week. :yes

It was 64 degrees this morning when I got up! And I did make chicken and dumplings just the other day--course it was 512 degrees then.

but yeah, the weather has changed--highs in the low 90's for a bit.

Making chicken and dumplings right now - at least the stock is simmering. Tropical storm Lee "cooled" things down a bit for us. ;) DH is so excited! It's one of his favorite meals. :heart

if you cook something on the grill here your neighbors will all tackle you to the ground and truss you up and tar and feather you. :shifty(the wild fires have every one on high alert).

The low was in the upper 50's this morning, the high will be 80...DH ate chicken and dumplings for breakfast. :jawdrop He's so weird. :shifty

Yep! me too. I really struggle with breakfast foods--their blandness makes me gag a bit, but I can totally eat later in the day food for breakfast. I had chicken and biscuit casserole for breakfast recently--very yummy.

Shameless brag - I would have eaten it for breakfast too if I had known it was this good! :blush DD is sitting quietly at the table devouring it - that does not happen often. :no
