I want two (or more) yummy frosting recipes...

fluffy and pipe-able with a wide tip for cupcakes


1) any thing goes


2) no dairy/gluten/soy/corn/eggs/coconut (natural palm shortening = o.k.) and know I will probably need to make my own corn-free confectioners sugar for this. :impouting

chocolate would be nice, as would something non-chocolate

Ok...Here is my suggestions.


Raspberry Butter Cream

1/2 cup shortening
1 cup fresh or frozen Raspberries (no sugar added)
1lb + confectioners sugar
1ts vanilla
1 pinch of salt

Puree the berries, then mix 1/2 of the berry puree and everything together If it's too thick you can add more raspberry puree ( I always use butter for this recipe and always end up using the full amount of puree not sure how shortening will change things)


Chocolate icing recipe

1/2 cup shortening
1/4 cup dutch process cocoa powder (I use the cheaper half and half version)
1/4 cup warm water
1lb+ Confectioners sugar
1 TB vanilla
1 pinch salt

Mix the cocoa and warm water together until smooth set aside. Mix everything else together then pour the cooled cocoa mix in until desired flavor level is achieved. It will darken up a bit as it is exposed to air. (again I always use 100% butter in my icing so make a trial version and hope for the best LOL)

I've got a recipe somewhere for a fondant icing that involves boiling so can be made with castor sugar I think... Will have a think which book it might be in...
