1 1/2 cups all-purpose flour
2/3 cup sugar (I use sucanat)
1/2 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
2 eggs, lightly beaten
1/3 cup oil
3 tablespoons melted butter
Preheat oven to 350. Grease an 8 inch sqare baking pan (I use a large, HOT iron skillet).
Combine flour, sugar, cornmeal, baking powder, and salt in a medium-sized bowl. Combine milk, eggs, oil, and butter in a small bowl; mix well. Add to flour mixture; stir just until blended. Pour into prepared pan.
Bake for 35 minutes or until toothpick inserted in center comes out clean.
It's really, really good. :yum
