View Full Version : My family is sick of soup!

Please give me some ideas for veg or low meat main dishes for dinner. In the last weeks we've had vegetarian chili, chicken noodle and butternut squash soup. Tonight I'm making white bean and collard green soup with a bit of ham in it. I think I can already hear some groans about soup again.

We usually have a meat-centered entree only about once a week. We've had beans coming out of ears lately. I don't even know what sounds good.

Technically it's still kind of "soupy" but once you serve it on couscous it's a bit more like "couscous with sauce" than "soup". :giggle

1. Black bean burgers
2. Burrito/taco night - lots of homemade refried beans and maybe little bit of beef or chicken
3. Falafel with tzatziki (plain greek yogurt with dill, mint and cucumber) on pitas and have hummus for dipping fresh veggies
4. Pindi chana (http://food-forthought.blogspot.com/2006/08/not-your-usual-pindi-chana.html) with yogurt dipping sauce and naan. Pindi chana is spiced chick peas, no gravy/soup but it is quite spicy so a cooling sauce is needed for most people.

We're having lentil sloppy joe tonight.

Hummus wraps with shredded veggies and cheese has been my lunch for a few weeks now. Very filling and so tasty.

What about veg stirfy with scrambled eggs as the protein?

I had forgotten about making my own veggie/bean burgers or lentil/veggie loaf. We did have tacos recently with beans and a bit of beef.

I need a good falafel receipe; mine are always so dry that I almost choke on them.

My MIL uses this falafel (http://www.foodnetwork.com/recipes/tyler-florence/falafel-recipe/index.html) recipe. I've never tried making my own because it's hard to scratch cook enough for 1 person (DH doesn't like falafel) so the store bought mix is easier for me to portion out.

Pasta? I do a chicken cordon bleu pasta that my family LOVES! I even made it once with only 1 piece of chicken (I cut it into tiny pieces.) Add lots of veggies, carrots, onions, peas (wait til last minute). And I use linguini because I love how creamy it is. Make an easy sauce with garlic & lemon using cream or broth as the base. Add some garlic toast, extra crunchy, for dipping.

pasta is always an easy one... boil some noodles and make a hearty (meatless) sauce with lots of veggies (onions, zucchini, peppers, tomatoes...)

And ditto one of the recips that was posted above with a link.. the sweet potato burritos! SO yummy! If you are tired of beans it's a great burrito alternative!

I almost made another soup for tonight--Ethiopian lentil. It would havw been good, but since we just had soup last night, I opted to make lemon risotto with peas. Dont know what else I'll serve with that yet.
