I need a carrot cake recipe

Anyone have good tried and true one? I'd be especially interested in ones that aren't quite as unhealthy as they traditionally are, but feel free to spam me with anything that is delicious! :P~

I had people compliment me for months after making this one (http://thepioneerwoman.com/cooking/2008/03/sigrids-carrot-cake-perfect-for-easter/). I didn't use the icing from that recipe, though. Mine came from a Betty Crocker cookbook - 1 pkg cream cheese, 1/4 cup of butter, 3 tsp milk, 1 tsp vanilla, and 3 cups powdered sugar.

My recipe is delicious and I've been making it for years! :yum It is quite similar to PW's except it has crushed pineapple in it. It still has 1 cup of oil so it isn't necessarily healthier. I'll copy it if you want a pineappley version. :)
