What about a lime jello salad (I say "salad" in the Midwestern sense, in that salads here usually involve some sort of un-naturally colored fluff containing some combination of jello, marshmallows, and "cool whip")?

pesto/cream cheese spread served with crackers

either take a brick of cream cheese and top with pesto, or if you are ambitious, you can soften the cream cheese and mix the pesto in.
