View Full Version : Easy, inexpensive south-western dinner

This dinner practically comes together by itself and it's healthy and tastes great!

1 cup brown rice
1/2 can of black beans
1/2 whole kernel corn
1/2 diced onion
2 garlic cloves, minced
1/2 cup diced tomatoes
2 cups tomato sauce
1/2 cup sharp cheddar (optional)
Cumin to taste
salt to taste (I used garlic salt)
Tortilla chips

Cook 1 cup of brown rice in 2 cups of tomato sauce and let simmer for 30 minutes. In the last 10 minutes, toss in the garlic cloves and onion and stir it up. When the rice is done, add the beans, corn, diced tomatoes and spices. Mix in the cheese if desired. Dish it up in a bowl and arrange tortilla chips around the bowl like a flower. Servings: 4 adults

Depending on where you buy groceries, this meal has the potential to be super cheap!

Haha, we had a similar dinner tonight. Except we had cornbread instead of tortilla chips.
