I decided that my family needs a nice, homecooked breakfast rather than a hurried bowl of cereal each morning. I've been searching for crockpot recipes to make that easier. Last night I followed a recipe (well, I modified it for what I had on hand) and it did indeed make a huge crockpot full of a nice warm, healthy cereal. Unfortunately it made a huge crockpot full of a nice warm, healthy cereal that our kids thought was only slightly more awesome than eating glue. :-/ Being super cheap, I could not bring myself to waste the cereal. I decided to experiment and see if I could make muffins from it.
Here is the cereal (my version)
1c brown rice
1/2 c cracked wheat
about 3/4 c golden raisins
8 c water
1tsp vanilla
Rinse the grains and crock on low for about 7ish hours. Warning, the raisins will look like grapes. :P~
I served it with cinnamon, brown sugar and milk.
Then, I took the leftovers and followed this recipe (my version again)
1/3 c margarine or butter, softened
1/2 c brown sugar,firmly packed (ran out so subbed white sugar in one batch)
1 1/2 c leftover hot cereal
2 eggs
1/4 c milk (I used reconstituted powdered)
3/4 c all purpose flour
3/4 c whole wheat flour
1/2 c wheat germ
1t baking powder
1t baking soda
Some cinnamon. I didn't measure...just put some in. :shifty
Heat to 375. Grease (Pam) 18 muffin cups. Bake 2/3 full muffins for 20 minutes.
Before baking I sprinkled them with more wheat germ. I love wheat germ. :yum
They were completely experimental and totally delicious. :rockon
After the first batch I decided to use up the rest of the hot cereal and make a double batch...which I neglected to put the baking powder and soda in. :doh Grrr....
